ET meets the Bush Tucker Man

 

Today we're on the hunt for a national icon - Les Hiddins. Or as you may know him, The Bush Tucker man.

Usually Les is barrelling along an outback track in his 4wd, but he's equally at home cruising the mangroves in his tinny.

When he's not wandering to all points of the country, Les escapes into the freshwater creeks of Hinchinbrook Island, near his North Queensland home.

Today, Les is teaching me to spot the small wonders of the Australian wilderness.

It's amazing the knowledge that Les has gained over the years. He reckons its' from associating with the different people he comes across throughout Northern Australia. Les often cuts loose in his Land Rover and heads off looking for adventure, in the Kimberlies and beyond.

Each region and its' people has its' own tricks and tips for survival in Australia's outback - and it's by listening and learning from these people that Les as become known as the guy you'd most like to be stranded in the outback with.

Whilst we couldn't coax any Barramundi out of hiding, Les used the time constructively to take some photos of Australia's magnificent wildlife. The photos will go towards Les' latest project - a series of books on the eco systems of Australia.

For a man who spends all of his time, and indeed makes a living out of exploring, Les never tires of the outdoor adventure lifestyle. And I for one can't say I blame him - it's not a bad office !
