Exotic Tastes with Peter Doyle

WHOLE BAKED WHITING ON TOMATO & OLIVES

INGREDIENTS

4 whole cleaned Whiting
salt & pepper
2 tablespoon melted butter
2 tablespoons chervil

Tomato & Olives
2 tomatoes, peeled & diced
12 olives
1 small Spanish onion, sliced
1 tablespoon butter
splash of white wine

METHOD

Score the Whiting by making diagonal cuts into the flesh of the fish. Season with salt & pepper. Brush fish with butter and place in baking tray that has ½ inch of water. Sprinkle over with chervil and bake for 30 minutes on medium heat.

Tomato & Olives
To frypan add butter and onions; sauté till soft. Add tomatoes and olives; season with salt & pepper. Splash in wine. Bring to boil then simmer slowly.

When fish is cooked place tomato mixture on plate and top with Whiting.
