GRILLED FISH BURGER
WITH SAMSON FISH

Serves 2
250g Samson
fish
salt and pepper
olive oil for grilling
2 slices Turkish bread about 10cm wide
3 tblspns mayonnaise
1 tsp Siracha chilli sauce
1 large tomato sliced
¼ cup sliced red onion
½ cup Italian parsley leaves, stalks removed
METHOD
- 1. Cut the
fish crosswise into two pieces about 1cm thick.
2. Season it with salt and pepper and brush it with oil.
3. Mix together the chilli sauce and mayonnaise.
4. Cut the bread into top and bottom pieces and brush with oil
and grill on the flat plate both sides.
5. Cook the fish on an oiled grill until just done (about 2-3
minutes each side)
6. Place the bread on plates and top with the parsley, tomato
and onion.
7. Lay the cooked fish on top and add a dollop of the chilli
mayonnaise, a little more parsley and lastly the top piece of
bread.
