LEATHERJACKET WITH SECHZUAN SALT

Serves 2

4 fillets leatherjacket
plain flour
lime wedges to serve

For the Sechzuan salt
1 tsp Sechzuan peppercorns lightly roasted
1 tsp five spice powder
1 tblspn salt

Grind the spices and salt together in a spice grinder or mortar and pestle.

For the salad dressing
1 clove garlic chopped
2 pinches Sechzuan salt
1 1/2 tblspns castor sugar
3 tblspns light soy sauce
few drops sesame oil

Grind the garlic, salt, and sugar in the mortar and pestle. Add the soy and sesame oil.

For the salad
1 1/2 cups shredded Chinese cabbage
1/2 cup shredded or grated carrot
1 green shallot sliced
1 tsp toasted sesame seeds

METHOD
1. Heat some vegetable oil in a pan until very hot. Dust the fish fillets with the flour and cook till golden both sides.
2. Dress the salad with the dressing and put it on the plate. Top with the fish and sprinkle over a little Sechzuan salt. Serve with a wedge of lime.
