 Red Throat Emperor

Preparation time 5 minutes

Cooking time 8 minutes

Serves 4

Ingredients

4 x 180 g portions Red Throat Emperor fillets

1 lemon (zest and juice)

½ teaspoon freshly milled pepper

To taste sea salt

2 tablespoons unsalted butter

2 tablespoons extra virgin olive oil

2 tablespoons XO Sauce

½ cup coriander

4 green onions

Method

Combine together the Emperor fillets with half the lemon zest, seasoning and a little of the olive oil.

Line a hot barbecue plate with a sheet of baking paper, lightly oil and grate the remainder of the lemon zest onto it. Top with the Emperor fillets and lower the hood. Cook on one side then turn and finish cooking.

Heat a heavy based fry pan and add the butter. Cook until lightly brown, then quickly add the lemon juice and olive oil. Combine in the XO Sauce and keep hot.

Add the chopped coriander and green onions to the sauce and present with the grilled Emperor.
