Bart Beek is one of our most dynamic personalities in the Australian culinary scene. As a chef, presenter, food writer and stylist, he has been involved in the hospitality industry since 1972. Bart has taught commercial cookery and was trained at the famous Cordon Bleu school in Paris. As a qualified chef, he has worked in some of the finest restaurants in Australia, Hong Kong, USA and France.

After owning and managing various award-winning restaurants in South Australia and Sydney, Bart and his wife Alaine moved to Melbourne, where they created Essence Food Studio, an innovative business that blends live music, theatre and culinary instruction. Located in Wyndham, Victoria, “Essence” has won multiple awards and garnered rave reviews from food and theatre critics alike. In 2009 it was named Wyndham Business of the year. Bart is a highly sought after Club Marine chef and presenter with a wealth of culinary knowledge who presents with great energy, humour and enthusiasm. His passion for the finest, freshest foods, cooking and eating is evident and inspirational to audiences everywhere.


Toby Bosschieter ::

Toby loves nothing more than getting in his 4wd and exploring Australia. The youngest of four boys, Toby did his first 4wd trip around Australia at just 6 weeks of age. Since then, he’s completed over a dozen trips to Cape York and explored it not only by 4wd, but also twice by boat - driving his 4.5m tinnie over 1800kms all the way around the tip from Cooktown to Weipa!

If he’s not exploring up north you’ll probably find him in the middle of the Simpson Desert, where he has explored everything from the French Line and Madigan Line to the very remote Geosurveys Hill.

Toby has rebuilt and modified 4wds and beach buggies for as long as he can remember - he’s an old bush mechanic caught in a younger man’s body! A keen fisherman and scuba diver, for Toby a 4wd is for more than just driving up a steep hill, it gets him to the doorstep of Australia’s best fishing, camping and scenic destinations.

The marine realm is her playground and her passion. As our resident marine biologist and PADI dive master Giovanna Fasanelli has been diving extensively around the world since she was 16 years old. With a deep love of sharks, she has made it her goal to swim and dive with as many species as possible from Great Whites, Tigers and Bulls to Lemons, Hammerheads and Cow Sharks. Michael Guest ::

Michael’s love of all things aquatic was instilled at a young age, fishing, spear-fishing and windsurfing. His passion has grown into an addiction and whether it is catching bait off the wharf, teasing Marlin on the continental shelf, or crashing through undergrowth and casting at bass this is where he is most at home. A fisherman with the environment at heart, Michael loves to spend time fishing with his family. Catch and release and take only what you need are the two philosophies Michael wants to instill in all young anglers.

From the watery depths to dusty roads Michael cut his teeth in the most spectacular of motorsports - rallying. Wins at State, National, Asia/Pacific and International level elevated him to be the first Australian to tackle a regular ride in the World Rally Championship.

Building and running his own rally cars in the early days has given him an intimate knowledge of race-craft engineering. This skill has been used to develop engines, suspension and tyres for manufacturers. If it’s got an engine Michael can get the most out of it whether it’s a car, boat or quad bike.
